Anyone else troubled by springtime allergies?
This year my reaction to the pollen seemed particularly strong.
When that happens, one thing always seems to make me feel better:
Homemade Chicken Soup
It doesn’t have to be fancy.
Key ingredients: chicken, good quality chicken bone broth or stock, onions, and garlic.
Throw in whatever other vegetables or fresh herbs you want or have on hand.
This time, my husband grabbed a slaw salad veggie mix.
Not what I would have chosen, but, as so often happens, it turned out amazingly 🙂
How to Make Quick Homemade Chicken Soup
Step 1. Chop up the chicken and brown it in butter over medium to medium-high heat with sea salt and pepper, plus any other spices you want. (I like the Simply Organic all purpose seasoning blend.)
Step 2. In a different pan, sautee the vegetables in butter over medium heat and season to taste with sea salt and pepper, plus any other seasonings you desire.
Step 3. Heat up the broth.
Step 4. Combine all ingredients and simmer for a moment to combine flavors.
Step 5. Enjoy.
